Question by : Why should you not overcook vegetables when following an alkaline rich foods diet?
I have been following a strict alkaline diet for a couple of weeks now. Recently I was cooking a meal for the family and I had my mother over who is following the same diet. She noticed that I had overcooked my spinach and told me that I should be careful not to overcook alkaline rich foods. What is the reason I should avoid overcooking foods with high alkaline content?

Your mother obviously has done her research. She was correct when she stated it is important not to overcook the alkaline containing foods such as spinach and other vegetables. When you overcook alkaline rich foods, it can turn that food into an acidifying food instead. Spinach when raw has large amount of alkaline and is great for that type of diet. However, when spinach is boiled on the stove the alkaline become acid and the spinach can become unhealthy.
This rule applies to all vegetables, when you cook them the nutrient value becomes less and the acid value becomes increased. Rather than boiling your vegetables, try baking or steaming them. Eating them raw is another healthy suggestions. In fact, raw vegetables have far more nutrients than cooked vegetables. An alkaline rich diet can be a very healthy option when you follow the procedure correctly. Also, for even higher alkaline content add fruits to your meal as well. Apples and strawberries are both fruits that contain high alkaline levels.
